Sweet Potato Lentil Soup

 

2 medium carrots, chopped
2T canola or olive oil
1 medium onion, chopped
2 medium celery stalks, chopped

1 garlic clove

2 cups dried lentils
2 medium sweet potatoes, cut into cubes

1 can (14.5 oz) diced tomatoes (optional)

DIRECTIONS:

  1. Saute first 4 ingredients for 5-7 minutes.

  2. Add in garlic and cook 1 more minute.

  3. Add 7 cups of water to lentils. Bring to a boil and then cover and simmer for 10 minutes.

  4. Add potatoes; cook covered-15 minutes.

  5. Add in tomatoes. Warm another 4 minutes.

  6. Season to taste.
